Soooo of course my last post for this month WOULD be a drink. What better way than to share one of my favorite cocktails with a TY twist!?! I've been into the sparkling water La Croix ever since it came out about 2 years ago. I recently tried the coconut flavor- which is AMAZING! It has a coconut flavor but it’s not too overwhelming.
With the hot weather FINALLY approaching us here in the PNW, a light refreshing drink like a mojito sounded perfect! What goes with lime (other than mint)? COCONUT! Seriously, you need to try these for yourself! I made them this past weekend for the girls before some birthday festivities, it was the perfect cool down from the pool.
What you need:
White rum - .5oz
Simple syrup (equal parts water and sugar, heat together until sugar dissolves) - .5oz
Fresh mint - leaves
La Croix sparkling coconut flavor - 1oz
Muddle lime, mint leave, and simple syrup together. Add rum and ice and shake. Pour into your glass and top off with your sparkling water, mint sprig and half a lime for garnish.
